Halibut with Herb Sauce and Salmon Roe

Halibut is a delicious alternative to the rich meat dishes of Christmas. In this recipe, the halibut is served with an herb sauce topped with salmon roe. All our recipes are sourced from godfisk.no

Method

  • Sprinkle salt over the halibut and let it rest for about 15 minutes.
  • Rinse off the salt and pat dry thoroughly.
  • Sear the halibut in olive oil and butter over medium heat until golden, about 2 minutes on each side.

  • Finely chop basil, thyme, and oregano.
  • Melt butter in a saucepan, stir in flour, and sauté the mixture for about 1 minute.
  • Add fish stock and let it simmer for 2-3 minutes.
  • Stir in heavy cream and bring the sauce to a boil.
  • Add basil, thyme, and oregano, and let the sauce simmer for a few minutes.
  • Taste with lemon juice and salt.
  • Serve the halibut with salmon roe, herb sauce, green beans, and potatoes.

Tip:Fish stock can be replaced with fish broth.
