  • Set the oven to 200 °C.
  • Place the lutefisk skin-side down in a baking dish.
  • Sprinkle with salt and let the fish sit for 30 minutes (if you prefer a firmer lutefisk, let it sit in the refrigerator for a couple of hours with the salt on).
  • Cover with aluminum foil. Bake the lutefisk in the center of the oven until fully cooked, about 30 minutes.
  • Cut the bacon into small cubes and place them in a cold skillet. Cook over low heat until golden, crispy, and the fat has rendered out. Add extra butter if the bacon is lean.

Pea Purée

  • Cook the peas until tender in water with added sugar.
  • Drain excess water and mash the peas.
  • Stir in butter and thyme, and season with salt and pepper.
  • Serve lutefisk with bacon, pea purée, and boiled potatoes. Many also enjoy serving lutefisk with brown cheese and syrup.

Tip:If you are using dried peas, soak them overnight before making the purée.
