  • Mix sugar, salt, and rice vinegar in a small saucepan, and bring gently to a boil while stirring. When the sugar and salt are dissolved, the rice marinade is ready. Let the marinade cool before use.
  • Cook the rice following the instructions in the sushi rice recipe, or follow the package instructions. Transfer the rice to a bowl and add a little of the marinade, folding gently. The rice must not become too moist, so add the marinade gradually. Cool the rice to room temperature.

  • Prepare the fish and vegetables; cut the salmon, mango, cucumber, and avocado into strips.
  • Place a nori sheet with the rough side up on the bamboo mat, and spread a layer of rice over the sheet. Avoid placing rice within about 3 cm of the top edge of the nori sheet.
  • Distribute the salmon, mango, avocado, and cucumber along the bottom edge of the nori sheet. Roll the maki sushi roll almost all the way up using a bamboo mat. Moisten the top edge with a little water and finish rolling it completely.
  • Cut each roll in half, then further into two or two pieces until you have 8 portions. Serve the sushi pieces with soy sauce, wasabi, and pickled ginger.
