Method

  • Cut the lingcod into serving pieces.
  • Finely chop the garlic and mix it with olive oil, curry, and chili sauce.
  • Marinate the fish in the mixture for at least 30 minutes.
  • Season the fish with salt and pepper, and cook it in olive oil over medium heat for 3 minutes on each side.

Salsa

  • Remove stems and seeds from the chili, and squeeze the lime juice.
  • Blend all ingredients in a blender or with an immersion blender, and set aside.

  • Finely chop the garlic and cut the broccoli into florets.
  • Sauté them in olive oil in a saucepan until the broccoli is just tender.
  • Add chicken broth and bring to a boil.
  • Season the broth with salt and pepper, and let it simmer for 1 minute.
  • Mix cornstarch with cold water and stir it into the broth.
  • Sprinkle with parsley before serving.
  • Serve the lingcod with coriander salsa, vegetables, and wholegrain rice.
