  • Cut the cod fillet into serving pieces.

  • Peel the carrots and cut into small batons approximately 3 x 1 cm.
  • Place them in a saucepan with salt, sugar, and butter, and add water until nearly covering the carrots.
  • Cover and steam for about 4 minutes until the carrot sticks are just tender.

  • Slowly brown the butter until it turns nut-brown and strain through a fine-mesh sieve.
