Oven-Baked Cod with Bacon and Slivered Bean Purée

  • Preheat the oven to 180 °C.
  • Cut the cod into individual portions, sprinkle with salt, and let sit for about 10 minutes.
  • Rinse off the excess salt from the fish and pat it dry thoroughly.
  • Place the fish pieces skin-side up on a baking sheet lined with parchment paper, and lightly brush with oil.
  • Bake in the center of the oven until the fish is cooked through, approximately 6 minutes.
  • Cook bacon until crispy in a dry skillet.

Slivered Bean Purée

  • Clean and julienne the slivered beans, then barely cook them until just tender in boiling water.
  • Whisk together heavy cream and flour, then incorporate this mixture into the boiling water with the slivered beans.
  • Allow the purée to simmer for about 4 more minutes.
  • Season with salt and pepper to taste.
  • Serve the cod with bacon, slivered bean purée, and potatoes.
