Baked Cod with Cauliflower Rice

Method

  • Preheat the oven to 180 °C.
  • Cut the cod into individual portions and sprinkle with salt.
  • Wrap Parma ham around the cod portions and place them in an ovenproof dish.
  • Bake the cod in the oven for 10-15 minutes, depending on the thickness of the pieces.

Cauliflower Rice

  • Squeeze the juice from the lemon, remove the leaves from the cauliflower and finely chop the parsley.
  • Grate the cauliflower using a coarse grater, and mix it with lemon juice.
  • Heat rapeseed oil in a frying pan and sauté the cauliflower rice until golden on medium heat, about 4 minutes.
  • Stir in chopped parsley and grated Parmesan cheese.

Side Dishes

  • Cut cherry tomatoes in half and slice the bell peppers into strips.
  • Quickly sauté this in rapeseed oil.
  • Serve the cod with cauliflower rice and vegetables.
