Oven-baked cod with butter sauce and shrimp

Method

  • Preheat the oven to 180 °C.
  • Cut the cod into serving pieces.
  • Dissolve salt in cold water until fully dissolved. Pour it over the fish and let it soak for about 8 minutes.
  • Place the cod fillets on a baking sheet lined with parchment paper, and bake in the oven until the fish is cooked through, about 6 minutes.

Salad

  • Cut tomatoes and cucumber into 1 cm pieces, and thinly slice the leek.
  • Combine the vegetables in a bowl with finely chopped parsley.
  • Drizzle with olive oil and season with fresh lemon juice, salt, and pepper.

Butter sauce

  • Hard-boil the eggs.
  • Simmer the double cream until it begins to thicken.
  • Remove the saucepan from the heat and stir in pieces of butter. Be careful with the temperature so the sauce doesn’t curdle.
  • Add the shrimp, coarsely chopped cooked eggs, and dill.
  • Season with salt and pepper to taste.
  • Serve the cod with salad, butter sauce, and boiled potatoes.
