Cod in Curry with Vegetable Rice

White fish pairs well in curry, and you can choose whether to use cod, haddock, or saithe. In this recipe, we made the curry with green curry paste. All our recipes are sourced fromgodfisk.no

Method

  • Cut the cod into cubes.
  • Coarsely chop the onion and finely chop the garlic.
  • Heat olive oil in a frying pan and sauté onion, garlic, coconut, cumin, and green curry paste for 1-2 minutes.
  • Add water and double cream, bring to a boil, and let the curry simmer for about 5 minutes.
  • Taste with salt.
  • Add the cod and let it cook through, approximately 5 minutes.

Rice

  • Cook the rice according to the instructions on the package.
  • Cut the bell pepper into small cubes.
  • Stir in bell peppers, peas, and corn during the last 4-5 minutes of cooking.
  • Serve the curry topped with finely chopped cilantro and side of vegetable rice.

Tip:If you prefer a spicier or milder curry, you can adjust this with more or less green curry paste.
