Sesame-Crusted Salmon with Creamed Leeks

Method

  • Cut the salmon into individual portions and pat dry with paper towels.
  • Mix flour, salt, and pepper in one bowl, lightly beat eggs in another, and combine breadcrumbs and sesame seeds in a third bowl.
  • Coat the salmon pieces in the flour mixture, then in eggs, and finally in the sesame breadcrumb mixture.
  • Let the pieces rest on a dry surface for a few minutes to allow the coating to set.
  • Cook the salmon in oil over medium heat for about 2 minutes on each side.

Leeks

  • Peel and rinse the leeks thoroughly, then let them drain well.
  • Slice the leeks into thin rings and sauté in butter for 2 minutes. They should not become browned.
  • Pour in heavy cream and let the leeks simmer for 2-3 minutes. Season with salt and pepper to taste.
  • Serve the salmon with the creamed leeks and boiled potatoes on the side.
