  • Stir in potato starch until reaching a suitable consistency.
  • Form small balls and roll them in breadcrumbs.
  • Fry the balls in a pan with oil until golden, then remove and place on paper towels.

Salsa

  • Cut sun-dried tomatoes into thin strips and finely chop garlic, shallots, and chili.
  • Mix all the salsa ingredients and let it simmer for about 20 minutes.
  • Taste with a bit of salt and sugar.

Aioli

  • Grate the garlic and fold it into the light mayonnaise.
  • Season with salt, pepper, and lemon juice.
  • Serve the sildinhos with tomato salsa and aioli on the side. Feel free to sprinkle with fresh herbs if available.
