Lobster on crispy vegetables with shellfish stock

Method

  • Blanch the lobster in boiling water for 20 seconds.
  • Remove from the boiling water and cool.
  • Extract the meat from the shells and set the shells aside.
  • Sauté the lobster in butter until just cooked through, 1-2 minutes.
  • Sprinkle with salt and pepper.

Shellfish Broth

  • Finely chop the garlic, coarsely chop the shallots and leek, and cut the carrot into strips.
  • Cut up the lobster shells and sauté in olive oil with tomato paste, garlic, shallots, leek, and carrot.
  • Add white wine and pour in water until just covering the shells. Let the broth simmer for 1.5-2 hours.
  • Strain the broth, add dill, and let it infuse.
  • Season with salt and pepper to taste.

Side Dishes

  • Slice the pak choy into strips and green onions into rings.
  • Serve the lobster in shellfish broth with pak choy and green onions. Feel free to garnish with dill.
