Shellfish Soup from Southern France

Method

  • Cut the salmon and cod into cubes.
  • Clean and slice the tomato and fennel.
  • Peel and finely chop the garlic.
  • Wash the orange thoroughly, grate the peel, and squeeze out the juice.
  • Sauté the tomato, fennel, garlic, orange zest, and saffron in some oil.
  • Add the tomato paste and shellfish broth.
  • Cook until the vegetables are tender, then blend the soup until smooth with a hand blender.
  • Season with orange juice.
  • Seer the fish cubes in oil and add them to the soup.

Rouille

  • Peel the garlic and chili.
  • Grate the garlic and finely chop the chili.
  • Mix the egg yolk with lemon juice and add the garlic and chili.
  • Gradually whisk in the oil until the mixture thickens.
  • Serve the soup with a spoonful of rouille and bread on the side.

Tip:You can also make rouille using mayonnaise as a base, flavored with garlic, chili, and lemon juice.
