Mango Salad

  • Slice cucumber and mango thinly, and mix with coriander.
  • Squeeze the lime juice, and mix with brown sugar, fish sauce, and soy sauce.
  • Stir until the sugar is dissolved and pour over the cucumber, mango, and coriander.

  • Scrape the cod skin well and cut the fish into portion pieces.
  • Cook egg noodles according to package instructions.
  • Rub the cod pieces with chili flakes and salt.
  • Heat rapeseed oil in a frying pan and fry the cod skin-side down until the skin is crispy, about 4 minutes.
  • Turn the cod and remove the pan from the heat, letting the fish cook through until just done, about 4 minutes.
  • Serve the cod with egg noodles, mango salad, and lime wedges.
