Cod with carrot purée

Ingredients

Carrot Purée

Method

  • Preheat the oven to 180 °C.
  • Cut the skrei into serving portions, squeeze lemon juice over, and lightly season with salt and pepper.
  • Add a little oil to an ovenproof dish and place the fish pieces skin-side up.
  • Bake in the oven for about 10-15 minutes, depending on the thickness of the fish pieces.

Carrot Purée

  • Boil the carrots until tender in lightly salted water.
  • Pour out the cooking water, but leave some in the bottom of the pot.
  • Mash the carrots in the pot with butter and grated ginger.
  • Reheat and season with lemon juice, salt, and pepper.

jus sauce

  • Melt butter in a saucepan until almost nut brown.
  • Add soy sauce, finely chopped garlic and season with lemon juice.

Broccolini

  • Bring a pot of water and salt to a boil. Add the broccolini and cook for about 2-3 minutes. It should be tender but still have a slight bite.
  • Drain the water and stir in butter.
  • Place a lid on and let it steam for a couple of minutes.

Serving

  • Serve skrei with carrot purée, jus sauce, and blanched broccolini.
