Spaghetti with Shrimp and Fennel

  • Clean the shrimp and set the shells aside.
  • Sauté the shrimp shells in olive oil, add water just covering the shells, and simmer for 20-30 minutes without a lid.
  • Strain the broth and simmer until about 2 dl of liquid remains.
  • Slice fennel and bell peppers thinly, and finely chop the garlic.
  • Sauté fennel, bell peppers, and garlic in olive oil, add the shrimp broth, and stir in tomato paste.
  • Let the sauce simmer gently for about 5 minutes, then season with thyme, salt, and pepper.
  • Cook the spaghetti according to the package instructions.
  • Add the shrimp and spaghetti just before serving.
  • Serve the spaghetti with grated Parmesan and a baguette.
