Baked Cod

Baked cod in the oven is one of the easiest dishes you can prepare. Feel free to use whatever vegetables you have in the fridge if you don't have the ones listed in the recipe. And for the sauce, you can choose based on your preference. All our recipes are sourced from godfisk.no

Method

Preheat the oven to 180 °C.
Cut the cod into serving pieces.
Chop leek and celery stalks into pieces, and cut carrots into cubes.
Bring water to a boil and cook the vegetables for 2 minutes.
Drain the water, and transfer the vegetables and cherry tomatoes into a greased ovenproof dish.
Place the cod fillets over the vegetables and sprinkle with a bit of salt, pepper, and thyme.
Here, you can decide whether to make a simple white sauce or use a pre-made sauce bought from the store. If you want to make your own white sauce, follow the step below.
Melt the butter in a saucepan. Add the flour and stir until you have a thick and smooth mixture. Let it cook while stirring for about 2 minutes. Remove the saucepan from the heat and gradually add the milk while whisking. Return the pan to the heat and bring to a boil. Season with salt and pepper, and let simmer for 5 minutes, stirring occasionally.
Pour the sauce over the fish.
Sprinkle with cheese, and bake the dish in the oven for about 15 minutes.
Serve with boiled potatoes.

Tips and Variations

You can also use pre-made vegetable mixes. If using frozen vegetables, ensure they are half-thawed before adding them to the dish.
This recipe is suitable for all types of white fish. Try it with cod, haddock, or halibut.
