Cod with Tarragon

Try this cod stew with fresh tarragon. Tarragon adds a wonderful flavor to the cod and the sauce made with cream. All preparations are done in the same pot, and you can serve it with potatoes. All our recipes are sourced from godfisk.no

  • Sprinkle the cod fillet with salt and let it sit for about 30 minutes.
  • Pat the fillet dry and cut into evenly-sized portions.
  • Quickly brown the cod in butter in a frying pan, about 2 minutes on each side, then remove.
  • Whisk together lemon juice, egg yolk, and fish stock, then pour into the frying pan.
  • Heat the mixture while stirring until it begins to thicken.
  • Stir in cream and chopped tarragon, and season with salt and pepper.
  • Place the fish fillet pieces in the sauce and let simmer until fully cooked, about 5 minutes.
  • Serve with boiled potatoes.
