Scallop Ceviche with Pickled Red Onion and Avocado

Method

  • If using fresh scallops, start by opening and cleaning the shells. For frozen scallops, place them in a bowl, let them thaw in the refrigerator, and drain on paper towels.
  • Pat dry the scallops and cut them into four equal pieces.
  • Remove seeds and membranes from red and green chili peppers, and finely chop them.
  • Finely chop cilantro, squeeze the juice, and grate the zest of lime and lemon.
  • Mix everything together with brown sugar, add the scallops, and let them marinate for 10-15 minutes.

Pickled red onion

  • Slice the red onion into thin strips.
  • Combine water, vinegar, and sugar, and bring to a boil.
  • Add the red onion and cook for 1 minute.

Side Dishes

  • Separate the bib lettuce into individual leaves, rinse and dry thoroughly with a paper towel.
  • Dice the avocado.
  • Fill the bib lettuce leaves with scallops, avocado diced, and pickled red onion.
