Grilled Salmon with Cucumber Salad

Potato Salad

Method

  • Cut the salmon into serving portions, brush with olive oil, and season with salt and pepper.
  • Squeeze lemon juice and sprinkle tarragon over the salmon.
  • Grill the salmon skin-side down for about 4 minutes, then turn and grill for another 2 minutes on the other side.

Cucumber Salad

  • Slice the cucumber thinly.
  • Dissolve the sugar in white wine vinegar, then mix with olive oil.
  • Season with salt and pepper, then mix with the cucumber slices.

Potato Salad

  • Cook the potatoes until tender in unsalted water, then cool and peel.
  • Cut the potatoes into smaller pieces, slice the radishes, julienne the red onion, and chop the dill.
  • Combine the potatoes, radishes, red onion, dill, and spinach in a bowl.
  • Mix sour cream, mayonnaise, and grated horseradish, and season to taste.
  • Add the dressing to the bowl with the vegetables and mix well.

Serving

  • Serve grilled salmon with cucumber salad and potato salad on the side.
