Hake with fresh vegetables

Method

  • Cut the hake into serving pieces and season with salt and pepper.
  • Place the pieces in a deep frying pan and pour in enough olive oil to cover the fish.
  • Heat the oil to 70°C using a cooking thermometer.
  • Let the fish poach for about 5 minutes.

Butter sauce

  • Reduce white wine vinegar and white wine to about one-third.
  • Add the heavy cream and bring to a boil.
  • Remove the saucepan from the heat and whisk in cold butter in small pieces. The sauce must not boil when adding the butter, or it will become thin.
  • Season with salt and pepper, and stir in chopped chives.

Side Dishes

  • Clean the asparagus and sauté in olive oil and butter for about 2 minutes. Season with salt and pepper.
  • Cook peas in water with a little butter, salt, and pepper for about 2 minutes.
  • Toss watercress with a little olive oil.
  • Serve the hake with butter sauce, asparagus, peas, and watercress.
