Mediterranean Fish Stew

  • Cut the salmon into 3 cm cubes and grate the orange zest.
  • Slice the onion into thin wedges, finely chop the garlic, and sauté over low heat until the onion is translucent.
  • Add tomato paste and simmer for a little while.
  • Add orange zest, canned tomatoes, and fish stock. Let it simmer uncovered for about 15 minutes.
  • Season with chili paste, lemon juice, and salt.
  • Add the salmon cubes to the sauce and let them cook until nearly done.
  • Slice the olives into rings and add them to the pot along with the shrimp just before serving.
  • Serve the stew with bread on the side and, if desired, some fresh herbs on top.
