  • Preheat the oven to 150 °C.
  • Sprinkle coarse salt on the halibut fillet and leave it for about 5 minutes. Rinse off the salt in cold water and pat the fillet dry with paper towels.
  • Cut the halibut fillet into serving pieces and place the pieces on a baking sheet lined with parchment paper. Bake in the oven for 10-15 minutes, depending on the thickness of the fillets.

Almond Potato Purée

  • Peel and boil the mashed potatoes in water without salt until tender.
  • Drain the water and let the potatoes steam dry.
  • Mash the potatoes, add butter, and mix well.
  • Add whole milk for the desired consistency, and season with salt and pepper.

  • Melt butter in a saucepan and remove the foam with a spoon.
  • When the butter starts to brown, strain it into a new saucepan, leaving the browned bits behind.
