Method

  • Cut the pickled herring and celery into small pieces.
  • Mix together herring, celery, and white pepper.
  • Place flour and salt in a bowl, and gradually stir in lukewarm water.
  • Knead the dough until smooth, starting with 1/3 of the dough. Wrap the remaining 2/3 in plastic wrap.
  • Shape the dough into a long sausage and cut it into about 12 small pieces.
  • Sprinkle flour on the work surface and roll out the dough pieces to about 2 mm thickness. Use a round cutter or a glass to cut out small circles approximately 6-8 cm in diameter.
  • Place a good teaspoon of filling in each dumpling, brush a little water along one edge as glue, and fold the dough together.
  • Heat sunflower oil in a frying pan, add the dumplings, and quickly brown them until golden on one side.
  • Pour in water, cover with a lid, and let it simmer until all the water has evaporated.
  • Remove the lid and let them cook for another 2 minutes.

Dipping Sauce

  • Squeeze the lime juice.
  • Mix lime juice with hoisin sauce, kecap manis, and sesame seeds.
  • Serve the dumplings with dipping sauce and any desired accompaniments.
