  • Boil the carrots until tender in lightly salted water.
  • Pour out the cooking water, but leave some in the bottom of the pot.
  • Mash the carrots in the pot with butter and grated ginger.
  • Reheat and season with lemon juice, salt, and pepper.

  • Melt butter in a saucepan until almost nut brown.
  • Add soy sauce, finely chopped garlic and season with lemon juice.

Broccolini

  • Bring a pot of water and salt to a boil. Add the broccolini and cook for about 2-3 minutes. It should be tender but still have a slight bite.
