Pan-fried salmon with Parmesan

Ingredients

Ratatouille

Parmesan cream

Method

  • Cut the salmon fillet into serving pieces, lightly sprinkle with salt, and fry until golden in oil, about 2 minutes on each side.

Ratatouille

  • Finely chop shallots and garlic, and dice the other vegetables into small cubes.
  • Sauté shallots, garlic, canned tomatoes, and tomato paste in olive oil for 2-3 minutes.
  • Reduce the heat and let the sauce simmer for at least 30 minutes.
  • Add the vegetables and let simmer for about 10 minutes.

Parmesan cream

  • Reduce the cream to half by boiling it down.
  • Stir in grated Parmesan until it melts into the cream.
  • Season with salt and pepper to taste.

Serving

  • Serve the salmon with ratatouille, Parmesan cream, and tapenade.
