  • Set the oven to 200 °C.
  • Cut the cod fillet, carrot, celeriac, and leek into cubes.
  • Peel the potato, halve it, and cook until tender.
  • Bring salted water to a boil, add the carrot and celeriac, and let boil for a couple of minutes.
  • Add the leek, let it cook for about 20 seconds, then drain the cooking water.
  • Drain the potatoes and roughly mash them with Dijon mustard.
  • Add the vegetables and eggs to the mashed potatoes, and stir gently so the egg doesn't coagulate.
  • Season the potato mixture with salt and pepper, and let it cool slightly.
  • Melt butter in a frying pan and stir in breadcrumbs.
  • Gently fold the cod into the potato mixture and transfer to a greased ovenproof dish.
  • Sprinkle butter and breadcrumbs over the dish and bake in the oven for about 25 minutes.
  • Serve garnished with chopped chives.
